I was really surprised no one jumped on this the other day but now having spoken with Narita, a frank discussion was had about this fish ‘it has to stay over summer, I need to see what I can do with this’. When this farm says something like that you need to listen to them. We all agreed that if this had the name of Omosako, rather than Hoshikin proceeding it then we’d be talking a completely different price point. I believe in this fish very much & I do have a habit of pulling rabbits out of the hat from this farm. I mentioned Hoshikin earlier & here’s why he’s turning heads with his Shiro production. This is my type of Shiro style. Less is more, great structure to the fish & the drizzled Sumi style that’s just waiting to thicken. Great head shape & easy fish to read moving forward. Super example
